Truffle Mushroom Risotto
Focus on a Signature Dish
Today, I want to share one of my signature dishes with you: Truffle Risotto. This dish embodies my approach to cooking—elegant, flavorful, and rooted in high-quality ingredients.
Ingredients:
• 1 cup Arborio rice
• 2 tbsp olive oil
• 20 g Celery
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1/2 cup white wine
• 4 cups chicken or vegetable broth
• 1/2 cup grated Parmesan cheese
• 2 tbsp butter
• Fresh truffle or truffle oil
• 50 g Enoki Mushroom
• 50 g White button Mushroom
• 50 g Oyster Mushroom
• Salt and pepper to taste

Instructions:
1. Heat the olive oil in a large pan over medium heat. Add the onion. Celery, and garlic, and sauté until translucent.
2. Add the Arborio rice and cook for 2-3 minutes until slightly toasted.
3. Pour in the white wine and stir until it’s absorbed by the rice.
4. Gradually add the broth, one cup at a time, stirring continuously until the liquid is absorbed before adding more.
5. Once the rice is cooked and creamy, stir in the Parmesan cheese and butter. Season with salt and pepper.
6. Finish with freshly shaved truffle, White Button, Oyster mushroom, Enoki Mushroom, or a drizzle of truffle oil. Serve hot.
Tips and Insights
Making the perfect risotto requires patience and attention. Here are a few tips:
• Keep stirring: Constant stirring helps release the starch from the rice, giving risotto its creamy texture.
• Use warm broth: Adding warm broth ensures even cooking and better absorption.
• Quality ingredients: Fresh truffle or high-quality truffle oil makes a big difference in flavor.
